Grilled Cheeseburger Burritos

Grilled Cheeseburger Burritos
 
Burrito size tortillas
Ground Meat
Ketchup
Worcestershire Sauce
Shredded Cheddar Cheese
Onions
Pickles
Tomatoes
Lettuce
Ketchup
Mustard
 
 
Brown ground meat until fully cooked and add enough ketchup to meat to make it slightly saucy (just a little less saucy than sloppy joes!).  Add a few dashes of Worcestershire sauce to meat and ketchup mixture, or more to taste.  Heat thoroughly.
 
Heat up skillet and butter one side of tortilla.  On the other side, spread meat in the middle and top with whatever you love on your hamburgers!
Fold in sides and roll from top to bottom.
Press into hot skillet with seal facing down.
Grill until bottom is toasted brown and burrito seal stays put.
Flip and grill other side.
 
Super fácil!

Stuffed Shell Tacos

Another great find on Pinterest!  I didn't really read any recipes, just saw a picture and went from there.  You HAVE to try these Stuffed Shell Tacos; everyone loved them! 
 
I did all prep on a Sunday night, so when we came home Monday from work/school, all I had to do was throw on the sauce/cheese, heat up the oven, and pop them in!  Bought me some extra time on a Monday night... 
 
Stuffed Shell Tacos
 
Jumbo Pasta Shells
Ground Meat
Taco Seasoning
1 package Cream Cheese
Green pepper
Onion
Taco Sauce
Shredded Cheese (Taco Blend)
Jalapeños
Sour Cream
Lime
Green Onions (or cilantro)
Tortilla Chips
Corn (Side)
 
(If you want to prepare ahead of time, do all steps the night before except adding taco sauce, cheese, and toppings.)
 
 
Preheat oven to 375.
Boil water and cook pasta shells.  Rinse in cold water and line them up in 13 x 9 glass pan.  While pasta is cooking, you can brown meat, strain, and add taco seasoning.  After you have added taco seasoning to meat, mix in softened cream chees.  You may want to cut the block into little squares to allow it to mix in and melt easier. 
Chop green peppers and onions.
When all this is prepared, stuff shells with a spoonful of meat and cream cheese mixture.
 

 Add green peppers and onions to each shell.
 

Cover shells in taco sauce and then cover with shredded cheese.
(I used one bottle of taco sauce, but will probably go for more next time to make it more saucy!)
 
 
Bake shells at 375 for about 20 mins. and until heated Top shells with shredded cheese and bake for about 8 more mins. or until cheese is melted.
 

Sprinkle chopped green onions on top of shells.
 
 
 
Top with crumbled tortilla chips, sour cream, jalapeños, and a squirt of lime juice.
Serve with a side of corn.

Creamy Spinach and Artichoke Pasta with Chicken

 As a pasta junkie, I will continue to throw random ingredients in a pan and see what happens! 
Some combinations might be pretty similar, but still use different ingredients.  Again, pretty quick... This one was YUM!  Gets me every time : )
 
Creamy Spinach and Artichoke Pasta with Chicken
 
Package of frozen spinach
Cherry Tomatoes
Tomato Basil Pre-Marinated Chicken (Roman Gourmet @ Walmart)
Whole Wheat Penne Pasta
Philadelphia Cooking Cream- Italian Cheese and Herb
Artichokes
Capers
Feta
(Bacon, Shredded Mozarella)
 
 
Preheat oven and prepare chicken as directed on package.  I added a little water in the bottom of the glass pan so the chicken stayed moist while it cooked.  You will later add this juice to the pasta...
 
Boil water and dump in pasta.  In the meantime...
 
Add about half a bag of spinach and half a cup of water to pan and simmer until water is mostly gone and spinach is cooked.  Slice cherry tomatoes and add to spinach. 
 
When chicken is done, remove from oven and slice into chunks.  Add chicken (and juice) to spinach and tomato and toss.
 
When pasta is done, strain and add to chicken, spinach, and tomatoes.  When mixture is heated thoroughly, add Philadelphia Cooking Crème and mix in until melted through.
 
Serve hot with various toppings!
Everyone has different likes!  You can top with things such as artichokes and capers with feta cheese, or another combo we tried was bacon and shredded mozzarella cheese.

20 min. Turkey Bacon Cheddar Melts

A super simple Monday night meal to ease back into the work week!  One of my "go tos" (especially when we get home after work later than planned on a Monday) is grilled cheese; quick and easy!  I wanted to change it up a little and upgrade the meal, but keep it just as simple at the same time.  We tried Turkey Bacon Cheddar Melts as a sub for the every day grilled cheese and it was a hit! 

The part of it that took the longest was probably making the bacon, but while that was cooking, I was able to prepare the rest. 
I used Oscar Meyer Carving Board Turkey Breast- wasn't too happy with the amount of meat you actually paid for, but I didn't want to use regular lunch meat.  Another idea is to make these melts from leftover meat you may have from a turkey dinner, instead of your original, plain turkey sandwhich!


Turkey Bacon Cheddar Melts

Turkey Slices 
Cheddar Slices
Bacon
Tomato
Mayo
Ciabatta Sandwhich rolls (Walmart) 



Preheat oven to 375.
Cook bacon in skillet.
While bacon is cooking, slice rolls and spread mayo on top part of roll.
Pile turkey on bottom and when bacon is done, add bacon.  Add tomato slice and top with cheese.
Bake 4 to 6 mins.
Make sure you don't bake them too long, the bread will get hard!

(I guess this is pretty self-explanatory!)

Quick, Healthy Lunch Idea

Spread hummus on a tortilla and chop cucumbers, cherry tomatoes, onions and spread over hummus.  Add feta cheese, lettuce, and cut up pre-cooked chicken strips.  Wrap it up!
