The Greekest of the Greek Naan Pizza

I love me some Greek...  'Nough said.
  
The food is ridiculously amazing, so once in a while I try to make Greek inspired food at home, although I would prefer to go out to an authentic Greek "hole in the wall" any day...

My Pinterest food board is out of control to say the least and the idea for this "pizza" came from a picture on Pinterest, but I went totally on my own with the ingredients, how to make it, etc.  I called it a "pizza" because the ingredients are very loosely thrown on top of the naan.

Super simple and FRESH- uses a lot of jarred, "pre-ready" ingredients, but some of them you could totally do fresher if you have the time, and minimal veggie chopping!  (I DID however grab FRESH spinach at the store for this week, not bagged fresh, but a literal fresh bunch of spinach, which I have never done before.  I washed, cut and bagged it to use for the week!) This was a weeknight meal for myself after I had made dinner for everyone else so I wanted something quick and simple...  
(I actually think I made leftovers for them this night, so no big deal there- I was just super tired and this was easy for me!)


Greek Naan Pizza

Tandoor baked naan- (Garlic, Stonefire brand)
Hummus- (Roasted Garlic)
Spinach- (fresh)
Kalamata Olives
Mild Banana Pepper Rings
Roasted Red Peppers
Artichoke Hearts
Red Onion
Feta Cheese
Capers
Cucumber
Crushed black pepper



Preheat oven to 350 degrees.
Slice onion.
Spread hummus over naan.
Top naan with fresh spinach, Kalamata olives, artichoke hearts, pepper rings, roasted red peppers, and onion slices.




Beautiful colors!

Add feta cheese on top of veggies.



Bake for at least 10 mins. at 350 degrees.
You may want to try longer... I HAD to take it out because I was sooo hungry and couldn't wait any longer.  Also, I didn't want to cook my veggies too long, as I wanted them to stay fresh and crispy... I was more looking to just warm it up!
While cooking, slice cucumbers.




After removing from oven, add cucumbers and capers then top with crushed black pepper.






Slice and enjoy!!!  I cannot even describe how good this was using words... pictures DO do it justice though... You HAVE to try it for yourself!
