Ultimate French Bread Pizza

Another addition to my list of pizza recipes:
pizza with a twist; a French twist!
 
Ultimate French Bread Pizza
 
French Bread Loaf
Ground Beef
Garlic Salt
Bacon
Onions
Minced Garlic
Jar of pizza sauce
Shredded mozzarella cheese
Variety of pizza toppings: green pepper, pepperoni, olives, etc.
 
 
 Preheat oven to 400 degrees.
 
Brown ground meat in a pan and season with garlic salt.
Drain and set aside.
Then, cook strips of bacon and break into small pieces.  Add a tablespoon of minced garlic and chopped onion to bacon.
 Cook until onion is caramelized and looks clear and browned.
 
 
 
 
Add cooked ground meat to bacon, garlic, and onion and mix together well, cooking for a few more mins.
 
 
Stir in jar of pizza sauce and cook until warm and mixed well.
 
 
Slice French bread in half and top each half with meat sauce mixture.  Place on large cookie sheet.

 
 
 
Top each half with mozzarella cheese and add toppings.


 
 
 







 
 
 
 
 
 
 
 
Bake for 20-30 mins. depending on how you like it cooked!

Sun-Dried Tomato Basil Chicken Alfredo

I could never, ever get enough pasta!  (I am part Italian, so it's in my blood!)  Anytime I eat pasta, I remember the smell of my mom's spaghetti sauce simmering away on the stove on a Sunday...  So, she does hate the fact that I use jarred sauce, ha ha, but it is a time saver- and I'm all about that. 
 
Pasta also takes me back to Rome- evening, sitting outside a restaurant in a black iron chair at a little black iron table chowing on a huge plate of pasta and sauce, sipping on a glass of red table wine and watching the people pass, listening to other diners' Italian conversations..aaahhh, not a care in the world! 
(Except for what I was going to eat next!) 
Now, anytime I make a pasta dish, I shoot for recreating that feeling.  SOOO......
This dish MUST BE paired with a glass of red; cab or Melot, whichever you prefer...
but you HAVE TO BE sipping while you're cooking! 
This is also a great weeknight meal after a looooong workday, it just makes you feel good!
 
Sun-Dried Tomato Basil Chicken Alfredo
 
RED WINE
 Chicken Breast
Fettucine Noodles
Minced garlic
Cherry tomatoes
Fresh basil
Classico Sun-Dried Tomato Alfredo
Cajun Seasoning
Lawry's Seasoned Salt
Chili Powder
Artichokes and Feta Cheese (optional)
 
 
 
 
Begin by boiling water for fettucine noodles and cooking chicken breasts in skillet.  I drizzle mine with walnut oil while they cook.  Season chicken with Cajun seasoning and Lawry's. 
(Again, I will apologize as I do not measure, just season to your heart's desire <3). 
 
While noodles and chicken are cooking, half tomatoes and rip basil leaves.
Once chicken is cooked thoroughly, cut into bite-sized pieces and return to skillet.  Add entire jar of sauce to cooked chicken.  Cook until warm and add two tablespoons of minced garlic.  Throw in cherry tomato pieces and add chili powder to mixture. 
Simmer for 10-15 mins.
 

 
When mixture is heated thoroughly add basil leaves.













Once pasta is cooked to your liking, stir fettuccine into skillet with sauce mixture.


 
Top with fresh basil leaves, artichokes, and feta cheese.  (Highly recommended!)
Serve hot with a glass of red...

Chicken Flautas with Spanish rice

My obsession with all things Hispanic/Spanish leads my taste buds to sample every sort of food created in this ethnic category.  As expected, I am a huge fan of burritos, tacos, taquitos, flautas, and whatever other name there is for different ingredients that are snuggly stuffed and rolled up into a soft tortilla.
 
I have seen every recipe available on Pinterest for flautas, but I literally just went with what I thought would taste good on this one, keeping in mind my requirements of
1.  simplicity  and 2.  short ingredient list
  Try this and seriously, enjoy!  These were delicious and you will think yourself
a master chef after this one...
 
Chicken Flautas with rice
 
Block of cream cheese
Corn tortillas
Cilantro Lime Preseasoned Chicken Breast (Walmart)
Shredded Fiesta blend cheese
Vegetable oil
Limes
Avacados
Sour Cream
Queso
Taco Sauce
 *Spanish rice or any other rice
 
 
Follow directions on package for cooking chicken and bake it in the oven.
Remove chicken from oven and shred with fork and knife.
Mix warm chicken with softened cream cheese.
 
*Oven should be heated to 375 for flautas...
 

 
Add shredded cheese to cream cheese and chicken mixture.

 
Heat vegetable oil in skillet and flash fry tortillas for just a few seconds on each side.

 
Place chicken and cheese mixture in center of each tortilla and roll up.  Place with the seal face down on cookie sheet.

 
Bake flautas in oven for about 20-30 mins. or until cheese is melted on inside, and rolled shells seem crispy.

 
 
 Serve with a variety of toppings:
                                       queso, taco sauce, and sour cream,
 
and with a side of Spanish (yellow) rice.
 


Squeeze fresh lime juice over flauta and serve with avocado slices!
